These cookies are a spin on the Hot Chocolate cookies I made a couple months ago. Here is the recipe Love From The Oven!
Here is the process.
Preheat the oven to 350 degrees.
The Dry Ingredients:
Add all the dry ingredients together and whisk until combine.
Set aside.
The Wet Ingredients:
With stand mixer, put in the butter and sugar, and mix until smooth.
Next add the vanilla.
Then one at a time, add the eggs, beating until smooth after each addition.
Then add in half of the dry ingredients, and mix until combine.
Add the remaining dry ingredients, mixing until combine.
Then add your white chocolate chips.(Note: I add 1 1/2 cups of chips, but you can add as few or as much as you want)
On a low speed, mix until just barely incorporated. You want to mix them in, but not crush the chips.
Grease your cookie sheet, then roll into 1-inch balls, and bake for 8-10 mins.

White Chocolate Cappuccino Cookies:
Makes 2 dozen
Dry:
2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
6 tablespoons cappuccino mix(I used french vanilla)
2 teaspoons instant coffee powder
Wet:
1 stick(1/2 cup) butter, softened
3/4 cup sugar
1 teaspoon vanilla extract
2 eggs
Mix-in:
1-1 1/2 cups white chocolate chips(or as much or few as you like)
Directions:
Preheat oven to 350 degrees. Mix all the dry ingredients together until combine, set aside. In stand mixer, add the butter and sugar, and mix until smooth. Then add the vanilla. One at a time add the eggs, beating after each addition. Place half of the dry ingredients in the mixer, and mix until combine. Then add the rest of the dry, mix until combine. Then on a low speed add your chocolate chips, just barely incorporating so the chips don’t get crushed. Grease a cookie sheet, and roll dough into 1-inch balls and bake for 8 to 10 mins.
