banana muffins

These muffins are easy, light, and yummy! Some of my family members are gluten free most of the time so I try to make some gluten free stuff! Sorry for no step by step pictures today, I made them late and didn’t have the time to take photos.

 

Gluten Free Banana Muffins

Serves: 2-3 dozen

Ingredients:

1 1/2 cup almond flour (ground almonds)

1 cup rice flour

1/2 c potato starch

1 tsp. baking soda

1 tsp. baking powder

1/4 tsp. salt

5 mashed bananas

2 eggs

1/2 c oil

1/4 c yogurt

1 tsp. vanilla extract

3/4 c syrup

Instructions:

Preheat oven to 350 degrees. Mix all the dry ingredients together and set aside. Mix wet ingredients together and mix with the dry. Scoop into greased muffin tins and bake for 10-12 minutes. Enjoy!
