So every few months we go to the cities and my mom and sister get their hair cut. So we decided to make it a family day outing. Here is what we did…

It all started with me being shoved in the back of the car with these crazies. I will tell you it wasn’t boring!

I read this book on the way!

We dropped my dad off at the art institute and then went to the salon. Here is me waiting for them to finish. Bright pink lipstick for the win!

Then me while we were going back to the art institute. I am so glad I don’t live in the cities!

Then we went to IKEA and had lunch and went shopping. I posted this on Instagram.

Then we went to the mall of america. I wanted to throw up looking at this ride.

We got Caribou, so good! I always get the mint condition mochas, blended. What do you get?

Here is Colin and I at dinner.

And my dinner. It was so big I had to have 2 plates. Needless to say I didn’t make a dent into it. We went back home and had ice cream and watched Moms Night Out, which is really funny! So that was our day.

Turn oven to 500 degrees. Peel your potatoes but keep the skins.

Cube your potatoes and place them in a pot filled with water and bring to a boil. Mine took about 15-20 mins to cook completely.

Coat your potatoes skins in the oil and place on baking rack in the oven(with pan underneath). Keep a eye on them, though.

Melt your butter in a skillet and then place the chopped onion in.

Since you are trying to caramelize them, you want to cook them low and slow. Stir them often so there is even browning.

This is what you want the color to be. Set aside.

By the time your onions are done your skins should be toasted and have a crunch to them. Turn your oven down to 350 degrees.

Place on a cutting board and roughly chop. Set aside.

When you can stick a fork in your potatoes easily, drain them and place them in a big mixing bowl.

With a potato masher, mash them up well.

Then add in your butter, sour cream, mayo, salt, pepper, and milk. Mix well.

Then add in your bacon and seasonings. Mix well.

Add in your cheese, onions, and skins. Mix gently, you don’t want to crush your skins.

Put into greased 9″ by 13″ pan and bake for 20-25 mins, or until golden brown.

This is one of my favorite things my Mom makes. Beware, you will get messy!

Here is the process.

Ingredients:

Chopped peppers and onions

Cooked and drained ground beef and sausage

Mozzarella cheese

Parmesan cheese

Rosemary

Oregano leaves

Garlic powder

Water

Tomato sauce

Tomato paste

French Bread

(Note: I will put exact measurements at the end of this post. I am also making a double batch, but will be putting the measurements for a single batch).

Instructions:

Saute your peppers and onion in a pot big enough to hold entire mixture.

Add in the meat and mix well.

Add in your water, tomato sauce and paste, parmesan cheese, and seasonings.

Mix well, and simmer for 10 mins.

Preheat oven to 400 degrees, and get a pan and place foil on the whole surface.

Cut your bread in half lengthwise.

Scoop out a little of the bread. Note: I scooped out a little too much, so just get a little out. Also, the bread you scooped out can be used for meatloaf or you can freeze it for future use.

Line the bottom with half of the mozzarella cheese.

Scoop the meat mixture onto the bread.

Top the meat mixture with the rest of the cheese.

Top it with the other side of bread, wrap it tightly in foil, and bake for 6-8 mins or until warm.
