<p>I love frozen yogurt! Its pretty much ice cream, but you feel a little less guilty eating it! Here is the recipe. Enjoy!</p>
<p>&nbsp;</p>
<p><strong>Mocha Almond Fudge Frozen Yogurt</strong></p>
<p><strong>Serves 8</strong></p>
<p><strong>Ingredients:</strong></p>
<p>1 container Vanilla Chobani Greek Yogurt</p>
<p>Coffee concentrate (see note below)</p>
<p>1 tsp. vanilla extract</p>
<p>1/2 c milk (or whatever you prefer) chocolate chips</p>
<p>2 1/4 c heavy whipping cream</p>
<p>3/4 c powdered sugar</p>
<p>pinch of salt</p>
<p>3/4 c almonds, chopped</p>
<p>(<strong>NOTE: </strong>To make coffee concentrate, put 1 cup of strong coffee in small saucepan and cook on med-low heat until halved in size, about 10 mins. Cook until it is halved again. Let cool completely till ready to use).</p>
<p><strong>Instructions:</strong></p>
<p>Make the ganache first. Place chocolate chips with 1/4 c of heavy whipping cream in microwave safe bowl and heat up in 20 sec. intervals until smooth. Place in fridge to cool. Next make the yogurt mixture. Place yogurt, coffee concentrate and vanilla in large bowl and mix together. Set aside. Next make the whipped cream. Place the rest of the cream in a bowl of a stand mixer with the powdered sugar and salt and whip until firm peaks. Fold that gently into the yogurt mixture. Lastly chop almonds. Gather all your components and get a plastic container (that you don&#8217;t mind in the freezer) and put 1/3 of the yogurt mixture into the bottom of the container, tapping on the counter to get any air bubbles out. Next drizzle in 1/3 of the ganache mixture followed by 1/3 of the almonds. Do that 2 more times. Then take a long skewer and swirl it together (don&#8217;t to this too much because you want to see the swirls not mixed all together). Freeze 4 hours for soft serve or 8 for firm. Enjoy!!!!</p>

				<content:encoded><![CDATA[<p>So I have been thinking about memories a lot. Here are some that I laugh every time I remember them!</p>
<p>&nbsp;</p>
<p>1: A couple of years ago my older sister Gillian had some friends over, so the rest of the family had to leave the house. My Dad, Colin(older brother), his friend Alex, Sophia(little sister), and I went to see a movie. On the way to the theatre, Alex told me that green bean spelled backwards spells gullible. Yeah gullible I was, because I spent the rest of the way there trying to figure how that was possible! Now I just laugh at myself!!</p>
<p>2: A little while after we moved into our current house Colin, Sophia, Solomon(little brother), and I were raking leaves. To pass the time up Colin and I thought it would be funny to tell Sophia that she was adopted. Yes it was mean, but we totally had her believe that in fact she was adopted!! So I guess that is one thing Sophia and I have in common!!#gulliblesisters</p>
<p>3: For my 12th (I think) birthday, I decided to make brownies and then I was going to decorate them. Well after I had scooped them into the cupcake liners, I realized that I had forgotten the vanilla (I should say at this point that I was doing the recipe from memory. I thought I knew that recipe like the back of my hand. Turns out, I didn&#8217;t) so I took the batter out and added the vanilla, then popped them in the oven. About 20 mins in the baking time, I turn the light on and notice that they don&#8217;t seem to be baking. I take them out and try to figure out what went wrong and them it hits me&#8230;I forgot the eggs!!  I was so shocked that I forgot to put eggs in!!  Anyway, we ate them but they were as hard as a rock!  Also, unfortunately this isn&#8217;t only time I have done this.</p>
<p>4: I remember right before the first Hunger Games came out, my siblings were telling me about the movie. I remember thinking &#8220;Wow that is going to be a terrible movie!&#8221;, and then a few months later it became my favorite movie! I surprised myself!</p>
<p>5: About 8 years ago on New Years Eve, my parents told us kids that they were expecting Solomon. We were all excited, and Colin and I started coming up with baby names. <div>1 1/2 teaspoon Vanilla extract</div>
<div>6 tablespoons Butter</div>
<div>1/4 cup Cocoa</div>
<div>5 egg whites</div>
<div>1/8  cup sugar</div>
<div>1/4 teaspoon Cream of Tartar</div>
<div>1 cup Heavy Whipping Cream</div>
<div>1 teaspoon Powdered Sugar</div>
<div>Pinch of salt</div>

<div>Instructions:</div>

<div>Place the sweetened condensed milk, chips, vanilla, butter, and cocoa in a saucepan and heat until smooth. Set aside to cool. Place egg whites in bowl of stand mixer and beat until foamy. Meanwhile in small dish, mix cream of tartar and sugar together. With the beaters still going gradually add in the sugar and tartar mixture. Once all mixed in beat until firm peaks. Set aside. Place cream, sugar, and salt into bowl of stand mixer and whip until firm peaks. Fold your meringue into your chocolate mixture, trying to keep as much air and volume in. Then add in your whipped cream. Fold gently. Refrigerate for at least an hour before serving. Enjoy!</div>

<p><strong>Wet:</strong></p>
<p>1 stick(1/2 cup) butter, softened</p>
<p>3/4 cup sugar</p>
<p>1 teaspoon vanilla extract</p>
<p>2 eggs</p>
<p><strong>Mix-in:</strong></p>
<p>1-1 1/2 cups white chocolate chips(or as much or few as you like)</p>
<p><b>Directions:</b></p>
<p>Preheat oven to 350 degrees. Mix all the dry ingredients together until combine, set aside. In stand mixer, add the butter and sugar, and mix until smooth. Then add the vanilla. One at a time add the eggs, beating after each addition. Place half of the dry ingredients in the mixer, and mix until combine. Then add the rest of the dry, mix until combine. Then on a low speed add your chocolate chips, just barely incorporating so the chips don&#8217;t get crushed. Grease a cookie sheet, and roll dough into 1-inch balls and bake for 8 to 10 mins. Enjoy!</p>
